Chicken with Apricot

Ingredients (serves 4):

  • 4 chicken drumsticks
  • juice of Del Monte® lemon
  • 1 pressed garlic
  • salt and pepper
  • 1 Del Monte® Apricot
  • Chilli salsa
  • 1 Del Monte® avocado, diced
  • 1 tbsp Spanish red pepper, chopped
  • juice of half a lime
  • 1/2 dl of olive oil
  • 1/2 tsp salt
  • wild rice


  1. Place the chicken in a greased ovenproof dish and season it with lemon juice, garlic, salt and pepper.
  2. Place the dish in the oven at 225 degrees for 30-40 minutes or until the meat is tender and has a nice color.
  3. Drain the apricots and dice them. Mix the ingredients for the salsa.
  4. Serve the chicken and salsa with wild rice.
