Storecupboard Pasta Salad
This pasta salad makes a quick and healthy lunch, or is perfect prepared ahead for a picnic or lunchbox. Canned tuna serves as a source of complete protein - one that provides all 10 amino acids your body needs to survive.
Ingredients (serves 4):
- 4 tsp Finely chopped red onion
- 2 tsp Caper
- 2 tbsp Pesto
- 4 tsp Olive oil
- 2 Cans of tuna in spring water, drained
- 200g Leftover pasta shapes
- 6 Sundried tomatoes, chopped
Mix the onion, capers, pesto and oil. Flake the tuna into a bowl with the pasta
and tomatoes, then stir in the pesto mix.
