Recipes for Children to Make

 

Summer is nearly here and this is a great recipe for children to make and enjoy..

Traffic Light Fruit salad

 

1 small cantaloupe melon

350g strawberries

Half small cucumber

 

For the syrup

250 ml water

1 sprig mint

Juice half lemon

1tbsp Fairtrade sugar

  1. Make the syrup. Put all ingredients into a pan over a gentle heat. Bring to the boil and boil rapidly to reduce the liquid by half. Allow the syrup to cool completely. Remove the mint.
  2. Prepare the melon into balls or chunks.
  3. Hull and wash the strawberries and cut any large ones in half.
  4. Wash and slice the cucumber into 1cm slices and cut each piece into four.
  5. Mix the orange melon balls, strawberries and cucumber together in a bowl and pour the syrup over the fruit.
  6.  Recipe tested with children at Alyth out of School Club – funded by Community Food and Health Scotland
