Britain’s first Tommelier cooks up a tribute to the cornerstone of Italian cooking

 

Britain’s interest in good food has certainly come a long way in recent years and the popularity of celebrity chefs is just the tip of the iceberg. In fact British foodies are more curious about food than ever before with two-thirds of us eager to learn more about taste and how our taste buds, flavours and food combinations work.

 Foods from all over the world have become staples to the British diet and no other cuisine is as familiar as Italian. Yet there may be more to your spag bol and margarita than you think – Italian food veteran and tomato doyen Paulo Battisel has become the first ever Tommelier. Using the skills of a sommelier to pick the finest tomato vines, Battisel has worked with Pizza Express’s head chef to develop its new tomato-mad menu and source the perfect tomatoes for British taste buds.  In Italy the tomato is king and forms the cornerstone of almost every popular Italian dish. With over 5,000 different kinds of tomato across the world, it’s difficult to know where to start!
